i stumbled upon this cookie recipe on one of my favourite blogs around christmastime last year and every time i make them they are scarfed down almost before i'm finished baking them! i've heard both, "these are the best cookies i've ever had and i don't even like cookies!" and, "these are the best cookies i've ever had and i should know - i'm an expert!"
they're easy, they're quick, they're delicious.
GINGERBREAD SOFTIES

2 cups sugar (+ 1/2 cup for rolling)
1 1/2 cups butter, melted and cooled
2 eggs
1/2 cups molasses
4 1/2 cups flour
4 tsp baking soda
2 tsp cinnamon
2 tsp ginger
1/2 tsp cloves
1/2 tsp salt
cream 2 cups of sugar with the butter. add the eggs and beat until thick. stir in the molasses.
sift the flour, baking soda, cinnamon, ginger, cloves and salt together in a large bowl. add the creamed mix and stir until combined well. cover bowl and chill mixture in the fridge for 30 minutes.
preheat oven to 350°F. shape the dough into 1" balls and roll in the remaining 1/2 cup of granulated sugar. bake on greased cookie sheets for 10 minutes, let cool, and eat!
this recipe yields about 5 dozen cookies.
and i bet you can't eat just one!
